At our family distillery in Kitee, Easternmost Finland, we make gin with classic juniper, distinctive Jerusalem artichoke and a hands-on approach. Small batches and careful work shape every bottle of Kalevala.
Juniper leads. Our roots give it character.
Juniper is at the heart of our gin. Alongside it, we use locally sourced Jerusalem artichoke—also known as topinambur—as a signature part of our botanical recipe.
This knobbly tuber brings subtle earthy warmth and depth, complementing the juniper and giving our gin its distinctive character. It is an ingredient that connects Kitee Dry and Ruby, and ties our gin to the place where we make it.
From botanicals to gin
We craft Kitee Dry Gin using the traditional London Dry production approach. Its botanical character develops during distillation, bringing juniper, Jerusalem artichoke and our other selected botanicals together.
Preparing the ingredients and working at the still are central parts of our craft. Each stage receives the same care that we bring to the finished gin.
Small batches. Personal attention.
We make our gin in batches of around 150 litres. This scale keeps us closely involved in the work, from preparing the botanicals through to the finished batch.
Our approach is practical and hands-on: small-scale production, careful attention and people behind every bottle.
Two weeks to become Ruby
Ruby begins with our signature gin, rooted in juniper and Jerusalem artichoke. After distillation, we macerate it with cranberry and bilberry for two weeks.
During this time, the berries develop its natural colour and distinctive berry character. The result is another expression of our craft, bringing Nordic berries together with the botanical foundation of our gin.
Finished by hand
We bottle and label our gin by hand at the distillery. These final steps carry the same care as the preparation and distillation that came before them.
From the first botanicals to the finished bottle, our gin remains a hands-on creation.
